Production Notes
Harvested 9/27/2024 at 23 brix. Limited skin maceration followed by a long, slow fermentation at cool temperatures in stainless steel. Aging for 6 months on the fine lees. Blended on 11/21/2024 and bottled on 3/5/2025. Drink now through 2027. 352 cases produced.
