With notes of cranberry, raspberry and a background of savory herbs, this wine gives way to a supple mouthfeel with hints of baking spice. Powdery tannins provide great texture and body, leading into a lengthy, velvety finish.
Barrel aged for 20 months in new & neutral French Oak
cranberry, raspberry & baking spice
The grapes were harvested and sorted in the vineyards with our Selective Harvester to allow for maximum hangtime and flavor development. The fruit was not crushed in order to preserve as much whole berry as possible. We fermented the fruit in a stainless steel tank with a combination of pumpovers and délestage to control extraction and flavor. After fermentation, the wine was racked to new and neutral French oak barrels for malolactic fermentation. The wine was barrel aged for 20 months.
Medium Garnet Red in Color. Strawberry, Red Currant & leather notes finishing with lime & orange. Medium in both Tannin & Acidity. I paired it with Venison/Mincemeat tart appetizers. This is a lovely wine.
