With notes of cranberry, raspberry and a background of savory herbs, this wine gives way to a supple mouthfeel with hints of baking spice. Powdery tannins provide great texture and body, leading into a lengthy, velvety finish.
The fruit for this wine is grown at our acclaimed Spice Cabinet East vineyard in the Horse Heaven Hills. The vineyard sits on a southeast slope above the Columbia River. The orientation of the block allows for morning sun exposure of the fruit, while avoiding the intense afternoon rays. Well balanced crop levels have allowed us to create wines with great depth and concentration.
These grapes were harvested and sorted in the vineyards with our "Selective Harvester" to allow for maximum hang-time and flavor development. The fruit was not crushed in order to preserve as much whole berry as possible. At the winery, individual lots were fermented in stainless steel tanks. Twice daily pumpovers and rack & returns allowed gentle extraction of color and tannins. After fermentation, the wine was racked to neutral oak barrels for malolactic fermentation. The wine was barrel aged for 20 months.
